 Texans Low-fat Turkey Sausage Casserole

 I love this recipe because it's quick and you can change it up in so many ways, depending on what you have in your stash of leftovers.

 

  



Texans Low-fat Turkey Sausage Casserole

Ingredients:
2 red bell peppers cut in half, seeds removed,then chopped into small pieces
1 Tablespoon olive oil
1 lb ground turkey sausage
 ¼-1/2 teaspoon of chipotle chili powder
1 Tablespoon of regular chili powder
2 tsp cumin
1 tsp coriander
Black pepper
1 large onion, chopped
  1/2 cloves of garlic, sliced
1 jalapeno pepper, minced (seeds and ribs removed for less heat)
1 8oz packge of frozen chopped spinach or collard greens
1 8 oz can diced tomatoes and chiles
 1 cup of chicken stock

Optional Garnishes:
Sour cream
Shredded cheese
Blue corn tortilla chips
1 8oz package of Frozen sweet corn

Directions:

In a large skillet, heat oil over medium. Add turkey and cook until browned, using a wooden spoon to break into small pieces. Add spices (chipotle chili powder, chili powder, cumin, coriander, red and jalapeno peppers, and black pepper). Stir until spices are mixed in, about 1 minute.
Add remaining ingredients (through chicken stock) to the skillet. Stir and cook on high for 4 minutes, then reduce to medium and cook covered for another 20 minutes. Adjust salt and pepper to taste. Serve with sour cream, shredded cheese and/or blue corn tortilla chips.
